In case it wasn’t abundantly clear, I’m from Louisiana and roux (fat and starch), like the “holy trinity” and perfectly cooked rice, is the foundation upon which some of the South’s most well-known dishes are based. An excellent roux can be achieved if it is whisked over heat to the right stage (as indicated by its color)—depending on your goals (making an étouffée or perhaps a velouté sauce?) .
